I thought Ash was the shorten version of "aAtoSHi".

They needed an English name to match the 3 syllables of Sa-to-shi, so 'Ash-Ketch-um'.
It's interesting that Professor Oak's Japanese name is 'Ookido', a transliteration of 'Orchid'. So for the english name they shortened it and changed the meaning to a tree.
