That's like asking why Shinji piloted the EVAs when he clearly didn't want to. However, the reasons are not all the same. Maybe they just go along with it seeing how they have very little else to do. At least they get to focus on something, even if it is pointless. I'm not saying that's always the case for them, but a temporary laps of boredom would probably be a nice reprieve.

I propose an alternate theory on the trade evolution. It's not so much the fact that they were traded, but, rather, like an inverse happiness evolution. Some pokemon evolve when they are happy, elated, joyful. However, when you trade a pokemon, their happiness plummets. So they evolve when they hit an all time emotional low. They become jealous of the other pokemon. What did she have that I didn't? Did he ever really care for me? I want his attention; no, need it! I must have it! So, they evolve in a moment of desperation, attempting to grab your attention and maybe change your mind.
However, the world unfolds before the Alakazam unlike it did when he was a Kadabra. The finality, the truth, the futility of it all. And like Shinji, he never recovers once he knows the truth. He cannot unsee.
